The Setting
Just 25 minutes outside the colonial city of Merida in the Yucatan jungle, resides the secluded and peaceful Chablé Resort & Spa. What makes Chablé & Spa a true work of art are its refined accommodations incorporating the 19th-century hacienda. Each of the 38 casitas and 2 expansive villas are a blend of traditional Mayan architecture with local rich woods and modern touches (ahem, private pools in every casita) situated within lush gardens. Your dining experience at Chablé will be second to none. We say that literally since Chablé’s three restaurants are presided over by Jorge Vallejo, widely regarded as one of the world’s best chefs. His Mexico City restaurant Quintonil was recently named #11 by “The World’s 50 Best Restaurants” if you need further proof. Chef Vallejo’s right-hand-man, Luis Ronzon, oversees the day-to-day showcases of seasonal and inventive Mexican fare, mostly sourced from the on-site traditional Maya gardens aka the Ka’anche’s. It’s also worth noting Chablé offers vegetarian, vegan, gluten and lactose-free offerings in all dining outposts.
- IXI’IM or “corn” if you speak Mayan, offers a refined setting within the lush jungle of Chablé’s expansive grounds. The dynamic menu incorporates fruits, leaves and vegetables harvested in the Maya gardens and the team works hand-in-hand with producers who only share their philosophy of sustainability. Ixi’im also boasts the aforementioned largest tequila collection in the world. Bottoms up.
- KI’OL is a more relaxed dining experience in the open air. This oasis-like space offers healthy eats from the Ka’anche’s throughout the day such as pipian verde with pumpkin, squash, cauliflower and in-house made niosette butter. And yes, more tequila.
- Breakfast, lunch and dinner can be had for in-room dining feature a scaled-down menu from Ki’ol’s offerings.
